Looking for low carb sauce recipes that do not contain splenda

If at all possible. I am making meatballs, and need a sauce for them, but need it to be low carb, if anyone has ideas (and recipes) (yoohoo wifey!! :D)
 
It would still be higher than what I am looking for. Plus, I not doing spaghetti, more of an appetizer type meatball sauce. i might do a cheese sauce if I can't find anythng else.
 
Just a brown sauce? Meat broth/drippings/brown bits from making the meatballs + some herbs, seasonings for flavor + whatever you can use to thicken it a bit (flour, cornstarch, arrowroot - sorry, I don't know what might work for low carb). Personally I would add some onion, garlic, and mushrooms, but I don't know how those are on the carb scale. If mushrooms are allowed, and you have some dried, I would re-hydrate some, and use the rehydrating water as part of the sauce.

Some do call for Splenda, but many times erythritol or stevia can be used.

How LC do you need?

Any marinara is going to have tomatoes which are high carb for a veggie.

You can do cream sauces without too much issue... maybe a balsamic dressing?

What are you doing with the meatballs?

My fave is greek meatball salad.

Meatballs with feta and olives and greek oregano mixed in. Fry them up and serve on a greek salad.
 
I checked out Linda's site already. I was kinda thinking along the lines of a diane type sauce, or a sweet and sour type, but can't find anything like that, probably b/c it has so much sugar in it. I have already made the meatballs-> ground lamb, dijon, egg, dehydrated mushroom, s&p.

I can't get erythritol here, but I do have xylitol and stevia. I find the xylitol not very sweet at all . I have guar gum for thickening. I would like this as low carb as possible, but, since I like sauces, I would want no more than 4-5 carb/1/4 cup at the highest.
 
cream, spices, cream cheese, and parmessan. World's lowest carb cheese sauce I know of ;)
