Okiegirl1 shared this on facebook yesterday, it looked good, so I decided it would be a great way to end the weekend...I'm so glad she found the recipe!! Since she isn't here as much as I am, I thought I'd share it with my other low carb mates here. (You can thank Okie next time you see her though.)
I made this tonight and everyone who ate it almost fell over backwards in amazement that it was made out of cauliflower rather than a flour dough.
I made it a thin crust pizza b/c that is what I like, topped with sauce, mozzarella, spices and some grated parm. The middle was a bit soft so we used forks to get to the crusts, which were so crusty and fantastic it made up for the soft middle. (I'm sure I can tweek it some way to fix that little hiccup...less eggs (I used duck) and more cheese?)
Two average to large heads of cauliflower = 9 cups give or take of riced cauliflower. I riced it all and then froze the rest in pre-measured amounts.
( One word of caution, grease your pan well. )
P.S. Wifezilla mentioned the zucchini bread "doughs" found in this blog are also yummy.
