Hmmmm the recipe I have calls for 6 pounds of meat and 2 tablespoons of salt. Not very LOW, but perhaps you could cut it.
However the sausage I make is called Boerewors, and some might not like the taste much. I LOVE IT.
It contains:
Coriander
Nutmeg
Cloves
Thyme
Allspice
Vinegar
Garlic
Worcester Sauce... etc..
