Lowfat, dairy free dessert ideas?

My dad is waiting to have his gall bladder removed, so he is on a low fat diet. he also has this thing called calcium gout, where he can not have any calcium whatsoever, in any shape or form.

I am doing Easter dinner this year, and while I can tailor the rest of the menu around his restrictions, I need help with dessert. I'll make two or three, but I would like to have one that he can eat. If worse comes to worse, I can always do an apple crumble or soemthing, but was kinda looking for something a bit more festive. Any ideas?

Lemon Meringue Pie is my go-to for my FIL who doesn't do dairy, that should fit your criteria :)

He also likes just about any other fruit pie and rhubarb pie (although it's a bit early for rhubarb), or you could do something like a strawberry shortcake with Angel Food cake and he could skip the whipped cream and just do strawberry sauce?

Carrot cake with applesauce vs oil?

You could put a glaze on top, instead of the usual cream cheese frosting.
