Hi Walnuthollow and welcome to the forums.

To make vinegar you simply put some raw juice in a jug and let it sit. Eventually you will have vinegar.

Of course there is a little more to it than that and there are hundreds of posts here to help you through the steps of making vinegar. Just get a good cup of coffee and sit back and read, read, read these forums as there are some wonderful folks here who share all the knowledge necessary to become an expert in no time at all.

Thanks for your reply...We use alot of vinegar and it's not cheap! When I was growing up my dad always made our own, but sadly enough I never paid attention. :he I would much rather have my own than the stuff from the store.

I took the mother and some dregs out of a bottle of brags and used that to start a batch. I add fruit, wine leftovers, etc... It is sitting in a big crock right now. It has a big ugly blob on top so I think its working...LOL

Everyone told me that my wine would turn to vinegar if I made it without sulfites. Poo. I can't get that same wine to become vinegar, it has been sitting in an open jar with a piece of gauze on top for WEEKS now and still smells just like wine!

Figures- when you WANT the wine to go "bad" it won't

I added apple cider to the last quarter or so of a bottle of Bragg's vinegar, too. Let it sit and grow and you have a whole bottle. It does take time, so depending on how much vinegar you actually use you might want to have a couple ageing at different times.

Make sure you shake it every once in awhile and aerate it. I kept mine on the kitchen counter and shook it daily.

Mine seems to be working. It's about 3 weeks old and is smelling yeasty. I think that's what it is supposed to do. I started with juice from apples I had crushed in the blender, and added about 1/2 cup of Braggs.
