Marinade for tough round steak

So i have some rounds steaks (untenderized) that i found while i was cleaning out my freezer. They are almost 3 years old. They could really use a good marinade recipe before i cook them. The ones previous to these were pretty tough, even when i cooked them in a slow cooker on low for 8 hrs. Any suggestions for a good marinade?? i thought i saw a marinade recipe in the NT cookbook that had red wine, but i cant find it again, so maybe im just seeing things.... Thanks Rach

IME the best meat tenderizer is lemon juice.

1/4 c. wine vinegar
2 tbsp. soy sauce
2 tbsp. vegetable oil
2 tbsp. catsup
1/2 tsp. onion salt
1/8 tsp. pepper


This is one I use from time to time


another is Moore's Marinade in a bottle (great taste) and then I add some olive oil and a pinch of italian spices.


here is another I use time to time.

1/2 c. soy sauce
1/3 c. oil
1 tsp. ginger
1 tsp. dry mustard
1/2 tsp. garlic powder


You can add or subtract in a mariande. They kinda can be geared toward the taste you are wanting at that time.

PLUS DO NOT forget to take a mallet and beat down the fibers in that steak before you put in the marinade.


I leave beef for about 2-3 tops. I love the flavor it gives, and the tenderness, but I like some beef flavor to shine thru also.



and after you eat them, we need a report back on how they turned out! :lol:

Now we're talking! Beef is really high dollar in my neck of the woods, so it's always the cheap cut...on sale.

Lemon juice? That's pretty basic and easy. Good to know.

FC, your first recipe is close to a marinade I used for jerky. I think it had some honey in it, too. Good stuff. I never thought of using it for regular marinade.

1/4 cup sesame oil
1/2 cup honey
2 Tbps. balsamic vinegar
2 tsp. ground ginger
2 garlic cloves
2 green onions, finely chopped
2 Tbsp. sesame seeds, optional



HONEY--now you said that I do have a honey one I just got off my recipe list on my puter.



Lemon, be careful not to let sit long. If too long the citrus actually will toughen a piece of meat. But if marinaded for a shorter time it enhances well.



We BBQ all the time. From my pork to beef to chicken I love any type of marinade, bbq sauces etc. I love the flavor they give--and heck eating chicken so much I need tons of taste variables :lol:

equal parts of: olive oil, lemon or (real) cranberry juice, and honey :)

Also, you can just pop the steaks into your crock pot first thing in the morning on low with a cup of (real) cranberry juice and lots of minced garlic, salt & pepper, and let 'er simmer all day--melt in your mouth yumminess at dinner time!

Okay, stupid question, do i use the flat side of the mallet or the pointey side???

If you don't all ready have one
i really REALy recomend a pressure cooker...
It takes thoughs tough cuts and makes them of so fall off your fork tender..
is worth the investment

Well, the verdict is in....

It was very good. Very tender. I picked up a peice out of the crock pot and it totaly felll apart. Bad news is i cooked it too long because i thru it in there before i went to bed, and taht was too long cuz it was really dry. But a little gravy and a big glass of milk, and it was really good.

The marinate i made was a combination of the recipies you guys gave me since i didnt have all the ingredients for a certain one.
Itwas
Blueberry wine(didnt have much else)
Soy sauce
dry mustard and ginger
balsamic vinegar
lots of garlic minced and powder
and some extra virgin olive oil
and lemon juice
i think that was it.
I didnt measure i just dumped. Must have been a good combo cuz it turned out alot better than the stuff i did a month ago
