Bought some organic millet earlier this week or last week. Made it like corn last time, but this time making it like mashed potatoes. It reminded me of both foods, lol. I'll have to do some research on how good it is for ya, but I know it's at least gluten-free and is supposed to be nutrient dense.

I love millet. What do you do to make it like mashed potatoes. I usually toast it in a skillet and add it to my oatmeal.

I soak it and add it to my bread. It's high in protein, iirc.

It wasn't that great as mashed potatoes. I ended up adding organic garlic powder, organic pepper, crushed red pepper and some natural salt. It was good with sugar and butter though.
I bought mine at Wegman's. Dehulled organic white millet there is $1.99/lb (that store is overly expensive so I'm sure you can find it cheaper). A little goes a LONG way though, so I thought it was pretty darn good for the price. Now I'm not sure how long dehulled millet lasts. If it lasts a good long while, I'll probably get a few more pounds and keep experimenting with recipes.
