So I canned some peas a few weeks ago, and I was just downstairs organizing my pantry/storage. It was my first time canning peas, so I don't know if it was normal. The water in the peas was cloudy. The seals are fine, but I was wondering about the cloudy liquid. Idid use salt in the peas--noniodized. could that be the problem? Are they ok?

Yes, your salt could be the culprit. You mentioned non-iodized but you didn't say if you used pickling or canning salt. The typical table salt has a non-caking ingredient in it to help stop clogging in salt shakers. This ingredient will cause clouding of the water in anything canned. The salt labeled "canning" or "pickling" does not have the non-clogging stuff in it and your water will be clear in the canning jars. Hope this helps.

ETA: I have been taught since childhood to never use "sea salt" in any canning or pickling procedure. And just recently I read in a book named Putting Food By that the typical "sea salt" that we can buy in our stores is sometimes not very pure and may contain minerals that will mess up the canning process.

For the life of me, I can not remember what kind of salt I used. it may have been sea salt, or pickling salt. I know it was not table salt. Is it still okay to eat though?
