Need Dinner ideas...Smoked Pork

We smokes a pork loin yesterday and now I need to figure out what to do with it.
I could cook up some brown rice and make fried rice...but that's a little dull.

I have some artichokes that i plan to cook and some Brussels sprouts that I'd like to roast up. But I am not sure what to do with the meat. It has great flavor but you know, it is just a hunk o meat. :idunno

DH like sauces, maybe I could come up with some sort of a sauce to serve over the warmed meat.

Oh good grief. First BBH posts goat meat, now you're teasing me with a smoke pork loin. Will the torture never end?!?! :lol:

A fruity sauce is divine with pork, apricot, orange or pear. I like to add some red pepper flakes to give it a kick.
You could do a BBQ sauce, of course.

So the only flavoring is the smokey taste?

Well it has a nice salty/spicy rub on it. But I am thinking BBQ sauce.

Now how to transform my home canned pinto beans into baked beans......off to search!

oh geez i was gonna say fried rice! you can make it spicy.. or baked beans, of course, with maple syrup.

"pulled" pork sandwiches with BBW sauce???

Whats BBW sauce???

Decided on sliced pork simmered in BBQ sauce, baked beans using this recipe http://www.uga.edu/nchfp/how/can_04/beans_baked.html

since my beans are already cooked and canned, I put it all (including some sliced of my pork and some of the congealed gelatin) into a casserole and into the oven. Yum!

And I think I will make BBHs apple slaw recipe.

Apple and Cabbage Slaw

2 tablespoons red wine vinegar or balsamic vinegar
1 tablespoon apple cider vinegar
1 tablespoon honey
1 tablespoon spicy or Creole mustard
1/4 cup extra virgin olive oil
2 medium unpeeled Gala, Red Delicious, or Fuji apples, cored, quartered, and thinly sliced crosswise (I use the tart apples from my orchard, kinda like granny smiths)
2 tablespoons fresh lemon juice
3 cups coarsely shredded red cabbage
2 cups coarsely shredded green cabbage
3/4 cup dried cranberries
3/4 cup pecan halves, toasted, optional
salt and pepper, to taste
Preparation:
Whisk both vinegars and mustard in small bowl. Gradually whisk in the honey and olive oil.
Toss apples with lemon juice, shredded cabbage, and dried cranberries. Add dressing and toss. Add salt and pepper, to taste. Stir in pecans, if using. Refrigerate the salad and toss again before serving.
Serves 6.
