Need large group meal ideas!

As I lay here on my sick bed, I am thinking ahead to thursday, when I have to feed 6 couples ( although I just wrote cows...wish I has 6 cows to feed!)

Our bible study group is coming over, and we typically only do dessert, but with girls softball underway and 4 of the 6 dads coaching we are doing simple meals now for those coming from the field.

Last week someone did sub sandwiches.

My trouble is that we are a low grain/primal family so I want to serve something that fits our eating style....I was leaning toward chili, and make cornbread for those who want it, but I am not excited about that.

I need something that is quick and easy to consume and low carb.

Ideas? :fl

Provide some taco shells for the carb junkies and slice some jicima for you and your family.

I like the Chili idea. It's supposed to rain next week. It would be nice and warm. Maybe chop up a bunch of toppings. :idunno

I would do something in the crock pot. That can be served easily over greens or squash or bread... Whatever you want to put out :)

Although the taco bar sounds great....

I want tacos now.

I'm making BBQ beef and a huge salad with chicken today for my next week or two. BBQ beef is quick in the crock pot. Salad is a crazy drawn out Abi-salad. Sautee the onions and squash.... sautee the yam... Cook the chicken and toss it with bleu cheese... Toss all the parts together and see what happens....

I'm liking the taco bar idea or I'd do a sandwich bar but since you had that last week the tacos sound better and hot as opposed to cold sandwiches. Someone could even do a taco salad if they wanted to. So that's cool. Individual pizzas might be fun but perhaps more preparation since you'd be going back and forth to the oven. A casserole is always good, though lasagna probably isn't real low carb huh?

A meal I made for a family reunion was pulled pork. I bought pork loin roasts from Costco and stuck 'em in crock pots in the am. I seasoned one with Rosemary Herb Seasoning Mix from Pampered chef and the other with lots of garlic and onion. Salt and pepper, too.

After they were done, I shredded them with forks and put them back into their juices. I provided small rolls and a big variety of veggies to stuff the pork sandwiches with. I also served a packaged salad, raw carrot sticks, and condiments to go on sandwiches and salad. My family LOVED this meal.

You could provide small rolls as well as your favorite low carb filler food so put your pork and veggies on.

I'm wondering now, what are good low carb bread alternatives? :)

eta: How is quiche for being low in carbs? It's sooo easy to make. Prepare a few the day before and serve it cold with a salad and drink. Ooooh, or fritata instead of quiche! No crust. :D

I'd cut up a huge bowl of salad....a really filled one~variety ofc lettuces, onions, green peppers, finally chopped broccoli, celery, etc. Then I would set out a choice of toppings~plenty of meats, cheeses, eggs, pasta, etc., some great salad dressings, a whole loaf of crusty bread and a vat of butter.

Or is that too much effort for a recovering sick person? If so, a big pot of beans or chili sounds warm and comforting and very little effort is involved. And I'd ask one of the other women to provide some great bread to go along with.
