Noobie! I need you corn bread recipe!

I know it is posted here somewhere but for the life of me I can not find it.

I made bean soup for dinner and the fam wants corn bread to go with it!

Hey Dace, I don't think Noobie has a computer at home. She usually post from work.

Did you get your cornbread made? I looke for the recipe for you but never found it.

Thanks 2Dream.....I just subbed out buttermilk for yogurt but I am not sure about the rest of her recipe. It si cooking and smells yummy!

Hopefully when she sees this she will post her recipe to the kitchen for easy reference!

This isn't Noobies...but I will share it with you all. My Wife sure does like this one!


The best cornbread recipe EVER!

HEYWOODS JALAPENO CORNBREAD


3 eggs cup oil
8 oz sour cream
1 16 oz can cream corn
tsp baking soda
1 cups chopped green onion
1 tsp salt
1 cup yellow corn meal (plain)
3 jalapenos diced
8 oz Monterey jack cheese
4 oz jalapeno cheese


Preheat oven to 350 degrees. Put oil in a cast iron skillet and heat to smoking hot.
Slightly beat eggs.
Add sour cream, soda, and salt. Stir to blend.
Add onions, peppers, corn then corn meal.

Grate cheese and mix together. Add 2/3 of cheese to mixture.



Pour hot oil into mixture stirring rapidly to melt cheese then pour mixture into hot skillet and top with remaining 1/3 cheese and bake 40 minutes until browned slightly.

So how was your cornbread?
You know, I don't remember posting my recipe! I think Free did one, though. Here's mine -
2 cups yellow cornmeal, plus 3 tablespoons for skillet
1 1/2 cups flour (blend of white & wheat)
2 teaspoons salt
1 tablespoon sugar (helps cut the sourness of the whey & yogurt)
2 teaspoons baking powder
1 teaspoon baking soda
3 eggs, beaten
1 cup yogurt
1 cup whey
1/2 cup melted butter - Divided to 1/4 cup portions
You can also use 1/4 cup lard for the skillet & 1/4 cup butter for the batter
melted butter for brushing top
Preparation:

In a mixing bowl, combine cornmeal, flour, sugar, salt.

In another bowl, whisk together the eggs, yogurt, whey, and butter. Combine with dry ingredients and stir until all ingredients are moistened. Batter will be like a thick pancake batter.

Let sit overnight at room temp.

Preheat oven to 425. Put 1/4 cup butter (or lard for this part, works just as well) in a 10-inch iron skillet and place in the oven to preheat.

Once the oven is heated, working quickly, but thoroughly, whisk/fork in baking soda & powder.

Carefully, with heavy oven mitts, lift skillet out and turn to coat all of the inside surface with oil. Sprinkle in the 3 tablespoons cornmeal, making sure to coat the entire bottom. I use a fork to sprinkle. This forms a crusty coating on the bottom & helps the cornbread to not stick.

Pour in batter and return to oven. Bake for about 20 to 25 minutes, until browned. A toothpick inserted in center should come out clean.

Oh I bet it was Free....no wonder I could not find it.

I made one using yogurt and whole wheat flour. the recipe called for sugar so I used a smaller quantity of honey.....it turned ot way too sweet. I had a nibble and was glad it wasn't very good so I did not feel compelled to eat more :gig

I always eat way too much of my cornbread. Or my dad's. My mom can bake a passable pone, but dad's is off the chain. Isn't that what the kids are saying these days?
