oatmeal raisin zucchini cookies

1 stick softened butter
1 cup packed brown sugar
1 egg
1 3/4 cups all purpose flour (I used whole wheat flour)
2 teaspoons baking powder
1 teaspoon cinnamon
1/2 teaspoon salt
1/4 teaspoon nutmeg
1/8 teaspoon ground cloves
1/4 cup milk
1 1/2 cups grated peeled zucchini
1/2 cup nuts (optional-I left these out)
1/2-1 cup raisins
splash orange juice
2 handfulls of quick cooking oatmeal (I added this on my own and no, I did not measure)


Directions:
1. cream the butter and brown sugar, add the egg and mix well
2. combine dry ingredients in another bowl and mix well
3. add dry ingredients alternately with the milk to the creamed mixture
4. stir in remaining ingredients
5. drop by spoonfuls 2 inches apart onto greased baking sheets
6. bake at 350 degrees for 12-14 minutes or until edges are lightly browned and cookies are set

ok i LOVE this.. thanks!!!

i think i'd trade out the raisins for choco chips (hubby wont eat raisins) and i like to use the old fashioned oats (never made difference and that is what we have).

say... wonder if you can use pumpkin in place of the zucchini...hum.....

probably....pumpkin would be good....hmmmm

I was eating these for breakfast and my papa says "cookies for breakfast???"

to which I replied "they have fruit and vegetables in them....they're healthy!!!" :p

I put pumkin in cookies and muffins tase great I make them just as I would oatmeal just add pumkin and off I go I'll see if i can find the recipes
