Sourdough that is. I bake or at least make something every day. Faves are bread, obviously, englis muffins--a BIG hit, pancakes and waffles, and pizza crust.
But, I have a question. My bread is turning out quite dense, and sour. While not a bad thing, I would like to find a way, or a recipe to make a lighter, fluffier bread.
this is the recipe I am using right now:
Night before baking:
1 C starter
4 C bread flour
2 C water
Combine, stir, cover with plastic wrap and leave out overnight.
Day of baking:
To the sponge,
add 1/4 C melted butter,
2 TBSP sugar,
2 tsp kosher salt,
1-2 C flour.
Mix until combined, then add remaining cup of flour until dough is fairly stiff . The dough will clear both the sides and bottom of the bowl. Knead at speed 2 for about 4 minutes or until dough passes the windowpane test. Transfer to oiled bowl and let rise in warm place until doubled, around 2 hours.
Shape into loaves and place into greased pans. Let rise for about an hour, or until light and risen nicely, then bake at 375. for 20 minutes.
