Here you go BubB! (Keep in mind I have not tested this!) I think I will wait until fall to try it as it seems more of a fall flavor to me. Let me know what you think!

Onion Soup with Apple Cider and Thyme

5 large onions (about 1 1/2 lbs)
2 Tbsp unsalted butter
1 1/2 Tbsp olive oil
1 1/2 Cup chicken broth
1 1/4 Cup fresh apple cider
1 bunch fresh thyme
1/2 Cup fresh grated parmesan.

Peel onions and cut in 1/2 throught the root end. Place them flat side down on cutting board, cut into thin slices about 1/8" thick

Put butter and oil in 4 qt pot on med. heat. When butter melted, add onions, increase heat to high and cook stirring frequently for 10 minutes or until they soften and carmelize.

Add broth and cider, scraping up the browned bits in the pan and bring to a boil.

Lower heat and add 5 long sprigs of thyme, salt and pepper to taste. Cook over med. heat for 25 minutes stirring often. Remove thyme sprigs and garnish with fresh thyme leaves and parmesan.

That looks good, but I'm not sure about following the bolded part of the instructions :lol: I might just scrape them up, and hope that the recipe turns out anyway :p

I finally made this for lunch today! YUM!!! Very rich and satisfying. Would have been really good with a roast beef sandwich. It doesn't make very much - only enough for 2 people to have a decent bowlful.

I could also see wtraining the onion solids out and using them on burgers or sandwiches and using the liquid for a french dip type sandwich.
