Pepperette recipe??? Anyone????

My dh has a hankering for some pepperettes, and wants to PAY someone to make some from some of the deer we harvested. Well, you know me, I don't want to PAY anyone to make them--I want to make them myself. Trouble is, I'm having a difficult time finding a recipe for them. And, if this a Canadian thing, pepperettes are like skinny pepperoni sticks--usually spicy.

Yeah, I think they might also be called hot rods or something similar. I'm not really a big fan, but the other three in this house love them.

DD is hooked on them too. I haven't made them yet (No smoker) but I found this recipe. Its the only one I've found that doesn't have nitrates in it

I bet modern pioneer has one though!

Thanks--I could modify that for venison, and borrow a smoker from a friend. I thnk I might try it.
