I went to the farmer's market this morning and splurge on a bushel of roasted red hot peppers. It cost $25 including the roasting. I can't believe how many peppers are in that heavy bag!!!

They were charging $3 for little zip lock sized bags so going for the whole bushel is a much better deal.

I just cleaned about 5 pounds so far and I still have a lot to go. 3 of those pounds are going in to a batch of chili. I put a 2 lb bag in the freezer.

Now I am off to find recipes for fermented tabasco.

I LOVE farmer's markets and roasted chilis are DA BOMB!!!

I am going to try and rinse and de-stem them all and weigh as I go to get a real total on my per pound cost. I think I did really good, but even if I didn't, the smell in the car coming home from that bag of roasted peppers was worth it :D

I wonder if I can get a roasted hot pepper scented air freshener...

I keep deeply inhaling and sighing the whole way home. My gf that came with me was cracking up :gig

After rinsing, destemming and seeding, I ended up with 14 1/2 lbs of cleaned peppers. Stupid me forgot to weight before I started so I could see how much was waste. Any math nerds hanging around that would like to play with a story problem?

If you have a 3 lbs 10 oz sample of roasted chili peppers, and once you clean them you have 2 lbs of cleaned roasted peppers, how many pounds of roasted chilis did you start with if you have 14 1/2 lbs after cleaning them all?

For extra credit, calculate the waste percentage :D

I knew some smart person could figure that out WAY faster than me.

So a little less than $1/lb for someone else to take the trouble to roast a LOT of chilis for me. I call this a very good deal.

Update: Here is what some of those roasted, cleaned chilis will be used for...

I wanted to make tabasco, but it needs to age 3 YEARS!!! No way am I that patient!
