I would like to make a NT style corn bread but I can not find pickling lime. I checked walmart and the grocery.....I am guessing it is gone until next canning season?
IME pickling lime is hard to find (in many parts of the country at least).
In some regions it seems to live with the spices (in a broad sense, like also cream of tartar and baking powder and so forth), so that is another part of the supermarket to look in, just in case.
Wild Fermentation has instructions for corn using sifted ashes from a hardwood fire. I plan to try it when life calms down a bit...You might also find the pickling lime at a hardware store that sells canning supplies. I can get it a my local Ace stores year round.
Thanks for the tip Pat, this may turn out as elusive as that darn washing soda.
Free, we occasionally burn paper in our outside fireplace (inside is gas) I will make a note to try and grab some ashes after we get it cleaned out and before more paper goes in.
