Pomegranates

My brother and SIL brought some pomegranates and persimmons with them when they came up to visit over Christmas, and didn't want to take the leftovers back with them (besides, California frowns on bringing fruit over the state line, even if it came from there originally). So the persimmons are now in the dehydrator - the soft ones as a puree, the Fuyus in slices. But I'm not sure what to do with the pomegranates. I thought about just freezing the seeds for future use, but then thought that the knowledgeable people here might have more imaginative ideas. There are only 4 poms left. Any ideas to share - for fresh use, or for preserving for later?

I always eat poms raw as a special treat. The seeds take a little getting used to, but ooooo, think of all the wonderful health benefits from those little ruby jewels.....Eat 'em up fast and give your body a nice mid-winter jolt of antioxidants!

I vote eat them.... they are great with yogurt or in a fruit sorbet or in a salad. We have been eating them for the past month; I love pom season! :drool

Oh yeah! kel is right, they are great in a salad.....I love that little burst when you get a few on your fork!
