Portobello and Asparagus Egg Strata

I was looking for a recipe that would use up some of the eggs we have flowing out of our extra refridgerator, bread, which FIL brought over a whole case of, and asparagus that is coming up in the garden.

I am going to use this recipe to make my own version, using ingredients I have on hand. But I thought it would be useful to many here, since it uses: eggs, goat cheese and sourdough bread. And you can substitute other vegetables for the asparagus.

Oh that looks so good! Do you have suggestions for substitutions for the goat cheese? Haven't cared for the varieties of goat cheese available to me, so quit buying it long ago.

I plan on using colby cheese or jack cheese, only because that is what we have in the house. I would think this would be good with a swiss or any chaddar cheese as well.

Oh my gosh, that looks so yummy!!!!!!!!! I just had steamed green beans and brussel sprouts for lunch, so I'm still a bit hungry. :drool I am so going to save that recipe!!

That looks scrumptious! I will have to see how best to fiddle the recipe to avoid the cheese, as DH likes everything in it except cheese. I'll need to make it in two pans though, because I love cheese. Can't be harder than making pizza without cheese :lol:
