Potato Vinegar - UPDATE and question

I found a recipe for rice vinegar. Essentially it was to soak rice in water to get startchy water, then to add sugar and mother.

I grew potatoes this year, so doing the same (getting grain starch in water and adding sugar) and putting in the mother...

Am I far out on my thinking? If I screw it up, will I kill my mother? That is what I'm most concerned about.

ALRIGHT! :D I think I found an SS way to have vinegar growing through-out the year - not just in apple season. It's not perfectly SS though - I need an SS source of sugar!

In case anyone cares, my potato vinegar is happily bubbling and starting to smell like vinegar on day 3!

I also tried garbanzo bean flour vinegar (because I have a lot of garbanzo bean flour!), but I didn't cook the bean flour in water, so it isn't doing as well.

My recipe for the potato vinegar to make in 1 pint jar:

5 potatoes, peeled and chopped. Boil in just enough water tocover until potatoes are soft enough to match. Drain off and reserve liquid. (Make mashed potatoes while you're at it.)

This yields 1-5/8 cup potato starch water. Pour into a canning jar. Add 1/4 sugar. Vortex into potato starch water for 2 minutes to dissolve. Let cool to 70 degrees F.

Add mother.

Cover with a cloth and it makes itself!

I am thinking of taking a little bit of mother out of each batch and trying crab apples and/or apple peels.

Where do you get mother from? an old bottle of vinegar?
I have some paul brag vinegar with mother floating on the bottom.
Is that any good?

An SS member here sent me some ACV mother. (Thank you!) I didn't have apples, apple juice, and I wasn't about to go buy some!

My goal is to learn TOTALLY SS things. So I had to be able to use something I could grow myself and that would be available year-round for a steady supply of vinegar.

The mother is just a culture that can be grown in any media.

My potato vinegar is bubbling vigorously and keeps reaching/wetting the fabric on top. It is at risk for getting contaminated. Hopefully it is growing fast enough to get the acidity low enough that nothing else starts growing in there too!

I think that is really cool. And the sort of thing I would do. NIce to know that is works.
Oh, I guess I will have to try and make some rice vinegar next ;) Thanks for posting the how-to.

I had to read that line twice too! It would never occur to me to make vinegar out of potatoes. Vodka maybe...... :p I'm very impressed!!
