Potluck Favourites?

I am seriously having a brainfart as to what to make for a potluck. If you told me specifically what to make, I would have no problem, but there is soo much to choose from. I have to make it tonight, and it won;'t be eaten until Saturday evening. ( overnighter trail ride), so I am assuming something to be served cold would be best.

What ar your top 10 cold potluck dishes?????? (or even top 5) :p

Don't know if these will help, as they are all served hot except the Coronation Chicken, but these are my top 5-10 potluck dishes:

1. Scalloped Potatoes (from Canadian Living)

6 potatoes (about 2 lb/1 kg)
1 onion, sliced
1/4 cup butter
1/4 cup all-purpose flour
salt & pepper to taste
1/2 tsp thyme or marjoram
2-1/2 cups milk

Sauce: In saucepan, melt butter over medium heat. Add flour, salt, pepper and thyme; cook, stirring, for 1 minute. Gradually whisk in milk; cook, whisking constantly, until boiling and thickened, 5 to 8 minutes. Set aside.

Casserole: Peel and thinly slice potatoes. Layer one-third in greased 8-inch (2 L) square glass baking dish or casserole; spread half of the onions over top. Repeat layers. Arrange remaining potatoes over top. Pour sauce over top, using tip of knife to ease sauce between layers.

Cover and bake in 350 F (180 C) oven for 1 hour. Uncover and bake until lightly browned and potatoes are tender, about 30 minutes longer. Let stand for 5 minutes before serving.

2. Au Gratin Potatoes

Same as Scalloped Potatoes, except add 1/2 cup grated sharp cheddar cheese and 1/8 cup grated Parmesan to sauce.

3. Tamale Rice Dish (from Company's Coming One Dish Meals)

1 lb ground beef
onions, garlic, green pepper chopped
2 14 oz cans stewed tomatoes
1 cup frozen corn
1 envelope taco seasoning (I use 1 tbsp Epicure Taco Seasoning)
1 tbsp honey
Chili powder and cumin to taste
1/2 cup water
2/3 cup white or brown rice

Brown ground beef and chopped veggies, add remaining ingredients, simmer until rice is cooked, pour into casserole dish.

Sprinkle with 1/2 cup grated cheese, dab with sour cream, sprinkle with olives and serve with plain nacho chips.

4. Coronation Chicken (from Once a Month Cooking Family Favourites)

2 boneless skinless chicken breasts, cooked and cubed
1/2 cup golden raisins
2/3 cup mayonnaise
1 tsp curry powder
1 tbsp mango chutney
1 tsp lemon juice
salt & pepper to taste
2/3 cup toasted cashews
1 large mango, sliced

Mix raisins, mayo, curry, chutney, lemon juice, salt & pepper, and half the nuts together in medium bowl, toss chicken with dressing, spoon atop lettuce or other salad greens on plate, garnish with remaining nuts and mango slices, serve cold.

5. Chicken Taco Bake

1 lb ground chicken or turkey
1 onion, chopped
1 tbsp taco seasoning
1 500 ml jar salsa
1 pint canned black, pinto, or red kidney beans
salt & pepper to taste
1 bag plain nacho chips
1 cup grated cheddar cheese

Brown chicken/turkey with onion, add half the salsa, the beans, and seasonings. Turn into 9x13 baking dish lined with nacho chips, sprinkle more nachos and cheese over top and bake till cheese is melty.

Believe it or not, i have NO potatoes,don't eat them much so didn't realize I had run out.

I have nor ground beef, or any ground meat at the moment, so the other recipes are out. :barnie Thanks though. :)

I have one recipe that will always be eaten, even by those that think I eat a little too weird.

I make a basic risotto with a few changes. Heat the rice (brown never works, unless its Basmatti) in a cast iron skillet according to the normal recipe.
Then add a few splashes of white wine.
Then I add several cups of bone broth, salt and pepper to taste and let it simmer. More broth is added needed.
When it is done, I add sausage if desired, grated zucchini, carrots and cheese to taste.
I never bring a scrap home :)

ETA. Some bone marrow is fabulous in here as well!

EAT again! Just saw you wanted a cold recipe... No way to use a buddy burner to heat food up? Or the downdraft coffee can burner that Paul talks about?

Baked Beans?

Hawaiian Baked Beans? (add pineapple and ham chunks to your usual recipe)

Pasta Salad?

Coleslaw?

7-Layer Dip? (refried beans, salsa, sour cream, guacamole, grated Cheddar, olives, green onions served with nacho chips)

Tortilla Pinwheels? (tortilla, cream cheese, ham or turkey slice, bell pepper sliver--roll up, then slice into pinwheels)

Sausage Rolls? (homemade or from the deli)

Or you could bring dessert--a cake or brownies baked and iced in the baking pan, cupcakes, angel food cake (take in pan), Nanaimo Bars, any kind of cookies...

I just keep some in my pantry at all times! I open them, boil them in their water, then drain off the boiling water, pop them in the crock pot, melt two sticks of butter...you could do one...then sprinkle parsley over them! YUM!! I have never gone home with more than one or two tiny potatoes left! Like people do not want to be the person that takes that last one! LOL!
