Question about canning meat

Right now we have some meat in the freezer that is getting older and we have a bunch more fresh coming in a few monthes. So in order to make room in the freezer and salvage the meat we are going to can it. We are mainly canning ground beef, and stew meat. We usually use a one pound package of each. Does this convert into a pint jar?

Honey wise, it does. Measure wise, 2 cups would only be 12 oz but scale wise, I don't know. You are looking at about 75 mins at 10LBs of pressure.
I'd can the fresh stuff, clean and organize the freezer and start making menus to allow yourself to hurry and use what all you already have. Actually I plan on organizing my own freezer now I'm on my off time.

There is an old saying: "A pint's a pound the world around", and this is a good rule of thumb, but not always entirely accurate. More like: a pint is just about a pound, most of the time. :lol: Also, with canning, you won't be fitting a whole pint of meat in your one pint jars, what with headspace and all.
I always make an informed guess at how many jars I will need, and then add in at least two more, to make sure I have enough cleaned and ready.

I had this factoid in my notes From some posts on beer and cooking that the Old RAM of Australia and I exchanged. to make things worse the US wet pint is different in volune from the dry pint

From personal canning experience, a pint canning jar will hold 1 lb weight of ground beef, a little less if your meat is in pieces/chunks :)
