Quick, hubby is bringing someone home for supper?!?!?!?

I have a chicken simmering on the stove(young cockerel, therefore not roast worthy), but now that someone is coming over for supper, what can I do with it? Chicken enchiladas had been suggested, but I don't have tortillas. What can I do with it that is company worthy? ( and preferably low carb and GF, but not necessary, as I can improvis for myself)

Nice rich chicken soup with home baked bread? Maybe serve a salad and a fancy beverage to make it more jazzy. And a dessert of course.

Chicken soup makes your house smell warm and inviting and so does home baked bread. The only gluten would be the bread and you could eat everything else, right?

Barbecue chicken sandwiches on homemade GF buns with some good old homemade french fries :hu

I might make soup, since I need to stretch the chicken now too. I had planned onmaking soup tomorrow witht he bones anyways. but normally soup is a lunch around here. I made bread today ( for everyone else), and I also made BBHs brownies with squash and peanut butter, so dessert is covered. I was just gonna do chicken in gravy, with mxced bean salad. Boring--not so good for company. I could also do a chicken alfredo., with broccoli, and cook some pasta for the others. I have an hour to decide.

Chicken and dumplings would stretch the chicken a bit too.

Jordan Rubin's chicken stock recipe makes FANTASTIC chicken soup. It never makes it to stock stage, it is always eaten as soup. :) Every time we have it everyone raves over it, it's really easy too. I second Savingdogs recommendation. :)

I would just do the chicken and broccoli with the alfredo sauce. I think that is what I will do. quick and easy--the only thing is I don't have full cream, but I have 1/2 and 1/2.

The bbq sandwiches sound good too, but I don't have enough chicken for that. I have coleslaw too. I'll save that for the next chicken.

Whew, that got the creative genes flowing! :p
