Quickie meals

I think I've done this before, but I cannot find my lists, so, I need ideas for breakfasts, lunches and dinners that can be frozen, dried or canned (or whatever storage). Then, when we're feeling lazy, we can just pull something from the freezer/pantry/wherever we have it jammed, reheat it and tada, "instant" dinner.

Well, there are a lot of things that can be made in muffin tins for easy single serving portions. I make my quiche in muffin tins. Also little mini lasagne...but I use cooked spaghetti squash instead of noodles.

Oh my goodness! Adopt me Wifey!!! I love quiche, but hate the crust (never eat the junk). And the minis are an amazing idea! That'd be excellent for us, as I could make them up for when the bf wants to grab something for the hour long drive to work. The lasagne is a great idea too, I'll have to try that!

I made some spinach quiche for my book club last week and now I have to make a WHOLE BUNCH of mini muffin quiches for a Christmas party...LOL

I chopped fresh spinach and then cooked it in butter. This went on the bottom of the muffin tin.

Next I caramelized red onion in butter and then added slices of portabello mushroom and cooked that. This went on top of the spinach.

For the eggs I used duck eggs and whipped them up with heavy cream. I spiced that with fresh ground pepper and celtic sea salt. I poured this on the cooked veggies.

On top I used 2 types of shredded cheese... mozzarella and parm.

Oh that sounds tasty!

I have one in the oven now....WW crust, layer of spinach, crumbled bacon, green onions and pepper jack cheese. I may have some but not eat the crust.

I am having your Butternut soup you posted, ala Dace (AKA.... didn't have the ingredients on hand!).

One of my favorite things to do is to take any left over spaghetti noodles with whatever sauce and put the sauce in the bottom of pint mason jars, then put left over noodles on top and freeze. I can then heat the jars in the microwave, turn them over onto a plate and instant dinner. And no spoiled leftovers.

There are lots of things you can freeze.... every time you do cook, just cook a little extra and pop the rest (label it first ) into the freezer. No need to spend extra time in the kitchen cooking just to fill your freezer.

Wifey, the soup was to die for! Excellent! I posted my improv in my journal!
