Rabbit for dinner?

Alright, I've decided that the newest rabbit is definately going to be dinner. I won't be able to breed the darned thing anyways, as he'll probably attack any does that I put in there. He's about a year old, so he's going to be tough. I need dinner ideas for this tough old fart. I have a pressure cooker if that helps. I had been thinking about making BBQ bunny. Anyways, any ideas would be nice. He's going to be processed today.

I know cooking in wine helps with an old chicken. Could you give him a burgundy marinate before he hits the grill?

BBQ is good. For old rabbit I always pressure cook, shred, place on cookie sheet, pour on the sauce and pop in the oven for 10 min or so. Make sure to use lots of onions in the pressure cooking process. Makes great BBQ sandwiches.

Or there is rabbit and dumplings. Also good. Pressure cook, pull off of bone. Mix some of the rabbit broth with some chicken broth and make your dumplings.

Rabbit spaghitti. Noodles, cheese, bell pepper, celery, cream of whatever soup. I use cream of chicken unless I happen not to have any celery on hand then I use cream of celery.

All the above you will notice require pressure cooking rabbit until falling off of bone. Makes an old rabbit new again. LOL

I have him in brine right now to suck the blood out of him. Maybe I should put some garlic in the brine...

Veggie stew with rabbit!!! Brown the pieces in a pan with some butter and then put them in the oven to finish cooking while you put the veggie soup together. When the meat is done pull it from the bone and put the pieces in the soup and let it go another hour or so. It is even better the next day after it sits. YUM!
