Ingredients
1 medium onion, cut into wedges
4 medium potatoes, peeled and quartered
1 pound baby carrots
3 cups water
3 garlic cloves, minced
1 bay leaf
2 tablespoons sugar
2 tablespoons cider vinegar
1/2 teaspoon pepper
1 (3 pound) corned beef brisket with spice packet, cut in half
1 small head cabbage, cut into wedges
Directions
Place the onion, potatoes and carrots in a 5-qt. slow cooker. Combine water, garlic, bay leaf, sugar, vinegar, pepper and contents of spice packet; pour over vegetables. Top with brisket and cabbage. I went to recipes dot com, but wasnt sure if there was some ol' timey trick or recipe that someone swears by.
when I freeze, do I freeze the veggies too or just the meat and recook veggies next time we eat it?
I've never cooked it or even ate it, but I'm always lookin' for something new.

oh, and I don't know if it has the season packets. I haven't bought it yet. the ad says $2.99 a pound, (I don't even know if that's a good price) which is more than I usually pay for meat, but if I can add a gazillion veggies and make it stretch, ..... might be worth it.
i always suggest www.cooks.com as the site to get recipes. they come from every day folks like you and me so most of them are simply written and easy to follow.
I add a gazillion veggies because that is how we eat....there aren't usually much leftovers, as the meat shrinks quite a bit and it is great as a sandwich the next day with spicy mustard. Lots of veggies will also tone down the salt, as it is quite salty. I love salt. I plan on making my own corned beef.....some day!
I skip the potatoes, add more carrots, and if dh wants, I add some cubed sweet potato near the end of the cooking time. I also add rutabaga. You can use turnip and parsnips, too. I skip the sugar. You won't need the spice packet if you use the above recipe.
A cheap corned beef brisket comes on sale around here in March (St Patrick's day-ish) for a buck a pound, if we are lucky. I always get a couple to put in the freezer, right in the package, as it comes vacuum packed.
