recipes for snacks/lunchbox foods

Everyone seems to talk about this all the time so I thought i would start a thread for it. Seems like someone is always trying to figure out new homemade, heathier snacks and foods that pack well for lunches so here you go everyone! I look forward to seeing what everyone has got!

Here's a few from some of my cookbooks that sound pretty good

Blueberry Snacking Bars

2 cups whole wheat flour
1 cup milk
1/2 cup honey
2/3 cup oil or butter
2 1/2 tsp baking powder
2 tsp cinnamon
2 tsp vanilla
3/4 tsp salt
3 eggs
3 cups blueberries
1 cup nuts

Mix together all except blueberries and nuts. Fold mixture into blueberries and nuts and pour into a 13x9 pan. Bake at 350 for 45 minutes until done. Cut into bars.

Sesame Seed Bars

2/3 cup honey
1/4 peanut butter or almond butter
1 tsp vanilla
1/2 tsp salt
2 1/2 cups sesame seeds
1 1/2 cup coconut

Mix together first 4 ingredients. Add sesame seeds and coconut and mix well. Press into a 13 x 9 oiled baking dish with hands dipped in water. Bake at 300 for 30-40 minutes.

Oatmeal Fruit-Nut Bars

3/4 cup rolled oats
3/4 cup nuts, finely chopped
1/4 cup wheat germ
1 tsp cinnamon
1/3 cup apple juice concentrate
3/4 cup pitted dates
3/4 cup raisins
6 Tbsp orange juice concentrate
2 tsp grated orange zest (optional)

Preheat oven to 350. Process the oats in a blender or food processor to the consistency of coarse meal. Mix the oats, nuts, wheat germ and cinnamon in a large bowl. Stir in the apple juice until mixture is crumbly. Reserve 1/2 cup of the oat mixture; press the remaining mixture into a nonstick 8" square baking pan. Process the dates, raisins, orange juice concentrate and zest in the blender or processor until it is chopped, not pureed. Spread the fruit mixture evenly over the oat layer and top with reserved oat mixture. Press it down firmly and bake until lightly browned, 25-30 minutes.

Davy Crockett Bars

3/4 cup butter
2 tsp vanilla
1 cup applesauce
3 eggs
1 Tbsp honey
2 cups oatmeal
1 3/4 cup whole grain flour
1/2 cup water
1 1/4 cup stevia
1 tsp salt
1 cup unsweetened coconut
1 tsp baking soda
1 tsp baking powder
1 1/2 cups chopped nuts
1 cup raisins

Cream butter, vanilla, applesauce, eggs, and honey until fluffy. In a separate bowl combine dry ingredients and nuts and mix thoroughly. Add gradually to applesauce mixture. Cook raisins in water and mix with rest of the ingredients. Spread in a 13 x 9 pan. Bake 10-15 minutes at 350. Do not overbake!

Wheat germ sticks

1 tsp baking powder
3/4 cup raw wheat germ
1/8 tsp salt
1 Tbsp minced onion or chives
1/4 cup butter
2 Tbsp milk
1 egg white
1/4 cup raw wheat germ

mix together first 4 ingredients. Cut in butter. Stir in 1 Tbsp of the milk and egg white. Shape into a ball. Roll out with floured rolling pin on floured surface to about 1/8 inch think. Cut into sticks. Brush with final Tbsp milk and roll in remaining wheat germ. Place on ungreased baking sheets. Bake at 400 for 6 minutes or until golden brown.

Cheese straws

2 cups all purpose flour
2 cups shredded cheddar cheese
1 tsp baking powder
1/2 tsp salt
6 Tbsp ice water
1 cup butter softened

Combine all ingredients. Chill. Roll out to 1/4 inch thickness and cut into 2"x 1/2" pieces. Arrange on ungreased baking sheets. Bake at 350 for 10-12 minutes.

Baja Bites

5 eggs, beaten
1 cup cottage cheese
1/4 cup all purpose flour
1/2 tsp baking powder
1/4 cup melted butter
2 Tbsp green onion, minced
4 oz can green chiles, drained
2 cups shredded Monterey Jack cheese

Combine eggs and cottage cheese and blend until almost smooth. Add flour, baking powder and butter. Stir in onion, chiles and cheese. Pour into a lightly greased 8x8 baking pan. Bake at 350 for 30-40 minutes. Let cool slightly in pan and cut into squares.

Why add flour to cheese?
What is this purpose?

LOL-LOL---just asking cause I think cheese in its natural form is perfect. I don't want to add cheese or salt to real cheese.

I just cut a few thin slices for Nicole of fresh natural cheese and she snacks on that.


just wondering why we would want to change it....DOES it make it like a string cheese where you can pull apart the whole piece and eat a string of it?

seriously, I don't know why anyone would want to change cheese..HAHA

It is a million times better than a cheeze it! :lol: I make them with chopped and toasted pecans and cayenne pepper....:drool They are a major hit at every party I bring them to. Also I give them away for Holiday gifts. You gotta try them! They are as good as, if not better than sausage balls!!! Seriously they are gone in minutes! You can make the dough roll it up and freeze it too, just slice them up and bake them :drool

thanks for letting me know what they truly are.....I was thinking those cheese strings things for kids....obviously these are top crackers! :)

I am a sausage ball hound dog...HA HAHA

Wow, have you made all those recipes? They look wonderful! Saving!!!!

PS: Those Baja Bites look like a great way for me to use up some of that goat ricotta that is building up in my freezer! I'll try them with goat cheddar and freshly ground wheat flour....
