Recipes that call for chicken broth needed

I am looking for some recipes for my class that are relatively easy to make and are VERY healthy and LGI or low carb. So no white flour, no potatoes, corn, peas. Avoid "prepared" ingredients that contain chemicals such as bullion, soy sauce, worcestershire sauce, and the like. Or if the recipes contain these ingredients, maybe add suggested substitutions.

So far we talked about chicken soup/stew, making a reduction for a gravy for SOS with chicken, turkey, or pork, cooking good grains in broth such as brown rice, ww couscous, or bulgar wheat.

I'm drawing a blank. What else do you do with chicken broth?

What about a nice baked chicken. Some chicken breasts cooked in a casserole dish with some brown rice and chicken broth with veggies.

Similar to a chicken soup ingredients wise - but not soupy LOL

Seasoned with sea salt, fresh ground pepper and a little rosemary maybe?

ETA seasonings

This is one of my favorite soups! It's super healthy, and freakin' delicious. One note, the soup gets kind of muddled in flavor after refrigeration. I have to add a big squirt of lime juice to each bowl when I reheat it, or it tastes strange.

I'm sure the sugar could be replaced with a single drop of stevia...

ETA: the first time I made this, I minced the lemongrass to get the most flavor. J loved it except he didn't like the texture of the minced lemongrass. It floats on top, and he said it was too woody for him. I like it...
If someone might grouse about having fibrous things floating in their soup, you can just cut it into 1-inch sections and slice them in half. This makes them easy to fish out of the completed soup.

Beans!!! I always do 15 bean soup with chicken broth. I add quick cooking barley to the finished soup for some more fiber.

I've also cooked pasta in chicken broth and water with seasoning. I don't remember what seasoning, or even the dish LOL but it was good.

I think it was water, chicken broth and butter.

This was an interesting challenge for me. Although we try to eat healthy, a LGI is not imperative for DH & I or family members/friends.

Chicken tortilla soup...sans the tortillas.

I use a recipe very similar to this one...except instead of jalepeno, I use 1 small chipotle and about a tsp(or 4) of the adobo. It lends a rich smokiness to the soup. I garnish with avo, cheese, cilantro and lime. Drop the canola and tortillas!

Here is a beef based, but would be just as good with chicken.

Spicy Mushroom Sausage & Barley Soup

Prep Time: 1 hours

Serves: 6

Ingredients

2 tsp olive oil

8oz spicy Italian sausage

3 celery stalks sliced

1 large onion, thinly sliced

5 medium carrots cut lengthwise in half, then crosswise in in pieces

2 cloves garlic minced or grated

1 pound fresh mushrooms, sliced

oz package of dried mushrooms (****ake or Portobello)

c pre soaked barley

2 Tbs tomato paste

32 oz beef stock

cup dry sherry

1 bay leaf

salt & pepper to taste


Directions

Place dried mushrooms in a bowl and cover with hot water to re-hydrate. Reserve liquid.


Heat oil in a large Dutch oven over medium heat. Add onions, cook 5 min or until tender. Remove casings from sausage, crumble sausage into pan with onions, cook 8 min or until browned. Add celery, carrot, garlic and bay leaf. Cook 10 min or until onions are golden brown, stirring frequently.

Stir in mushrooms, cook 10 minutes or until liquid almost evaporates. Stir in barley, broth, tomato paste, reserved mushroom liquid and brandy. Bring to a boil, reduce heat and cover. Simmer 1 hour or until barley is tender. Discard bay leaf and season with salt & pepper.

By the way...I FINALLY listened to last Sunday's call today....was that girl with the belly fat and stress me? I kind of giggled to myself as I listened! As always, great info!!

Yummy recipes!!! I forgot about egg drop soup, and the Italian version, wedding veil soup! YUM! And so easy!
