I've been wanting a pasta machine for years now, and finally came across an intact working one (manual included) at a thrift store for a reasonable price. Just yer basic hand-cranked thing, no fancy bells and whistles.

So now, er, what do I do with it? LOL I am looking for a good FOOLPROOF recipe for something simple that my family will LIKE (not go 'eeuww, it's too floppy' or anything like that). So I am asking here rather than just picking something at random out of a recipe book or website. Doesn't have to be whole wheat, we eat white-flour pasta too.

Thanks for all recommendations.

Pat, surrounded by kids (and DH) going thru a whiney phase and not really needing to provoke more of it :p

Just so ya know, I haven;t made pasta in a long time, but this is my recipe.

one beaten egg
1/2 tsp salt
1 cup flour
*2 tbsp water--if needed--added gradually, dough should not be wet.
Knead for 3-4 minutes, let rest one hour.

Now, if I only had some more time in a day and I would be making pasta. Good luck!

My Atlas pasta machine says this:
5 eggs
1 lb flour
Pour out flour onto board, make hole in center.
Pour 4 eggs in center and begin to mix. To soften add 1/2 oz olive oil, a little water or another egg.
Continue to knead until soft, smooth and uniform.
Form into ball and cover with cloth-let rest a few minutes.
Cut into sliced pieces and pass through on position one.
Fold in two and pass through again.
Reduce positions and continue to thickness desired.

I am not giving a recipe as mine is not fool proof, and I have not been happy with it.

Just wanted to say that if you are not comfortable mixing on a wooden board, it is really easy to toss ingredients into a food processor and pulse until you get the right consistency....kind of luck damp sand.

I make my own pasta and chuck in all kinds of weird stuff.

Two basic recipes:
4 cups white flour
2 tsp. salt
3 eggs
1/4 to 1/3 cup water

2 1/2 cups whole wheat flour
4 eggs
1 tbs. olive oil
1 cup packed basil (no stems) then run it through a processor/chopper

I have a clothesline that I use only for pasta to hang & dry the stuff, string it across the counter from one cabinet knob to another. That way it dries better and if any falls it hits the counter not the floor.

What I'd really love to have is an attachment that make tubular pasta like penne.......
