The cast iron skillet thread was hijacked, so I thought I'd post this on a different thread. Some of us were discussing pros and cons of glass or ceramic top stoves. For many of us, the subject of canning is important.

Here's what I found:
In summary, some smooth cooktop manufacturers say do not can on them, while others who say it is okay add stipulations on the diameter of the canner compared to the diameter of the burner. Boiling water or pressure canners may not be available that meet the maximum diameter pot they allow. All agree that the canners must be flat bottomed. Be sure to If you have a ceramic or glass stovetop and still have the manual, look it up there.

Then she has a list of stove brands and what the manufacturers recommend. The whole page can be viewed at:

Happy canning!

Thanks for that Marianne!

I've been fortunate with both the smooth-top in my old house, as well as the one that this house (been here 2.5 years) both work well for canning, but I know others have had issues.

We bought the old house stove about 9-10 years ago, and the one in this house is about the same age--hopefully most newer stoves work for canners :)

Marianne, I responded to your post on the other thread--the castiron skillets thread, and now I see you have moved your very informative post. I don't know how to move mine, but if someone else does, that would be great! thanks

Eh, I had to just retype it on a new post... But I thought some who weren't reading the cast iron thread might want to see this.

Marianne, thanks for the link about the glass top range and canning. I found that my new Frigidaire cook top is safe for canning, but my largest burner is only 9 inches in diameter. I checked the dimensions on the All American pressure canner I was going to get, and it is about 13 inches! So I was wondering what other SS-ers have done in this circumstance. Has anyone canned with the All American on a smaller-than-recommended-dimension burner? Maybe I should opt for a separate burner, possibly the coil type that is not as particular?
I know, I need to do some research to answer these questions but I wanted to whine a little first. Waah! Thanks for indulging me.

Yay, copy and paste! :)

Ya, I'm kind of whining too. I was planning on canning outside, using the burner thing on my propane grill. Grill shot craps, DH hauled it off and now I see it wouldn't have been big enough anyway.

Thanks for that link. I will read it when I am in town and can get wireless instead of slow dial-up.

I can't can on my glass top either. We're getting one of those big 3 burner propane stovetops - I borrowed one last year to do my canning on and LOVED doing my canning outdoors. I can fit two big canners on it - much less mess, much less heat, and I can still cook on my regular stove while canning. Costco has a nice, heavy duty one that also comes with a big cast iron griddle that fits over it that we can cook on too, I've designated some of my income tax return for it.
