Barbecue Sauce
Adapted from a recipe in Simply Stews by Susan Wyler

1 - 2 tbsp. olive oil
3 small onions, chopped
12 ounces water
cup plus 2 tbsp cider vinegar
cup ketchup
3 tbsp. light brown sugar
1 tablespoon molasses
1 tbsp. Worcestershire sauce
2 teaspoons ground cumin
1 teaspoon dry mustard
teaspoon dried marjoram
1 tsp. salt
tsp. freshly ground pepper
3 4 chilies (from can of chipotle peppers in adobo sauce)

In a large saucepan, heat the oil over moderately high heat. Add the chopped onions and cook, stirring often, until golden brown, about 7 minutes. Add the water, brown sugar, molasses, Worcestershire sauce, ground cumin, dry mustard, dried marjoram, salt, pepper and chilies. Bring to a boil, reduce heat, simmer until thickened.

Lower Sodium GF BBQ

6 oz can plain tomato paste (no extra ingredients)
1/2 cup cider vinegar
2 tbsp. Worchestershire Sauce (Lea & Perrins is gluten-free)
1-2 cloves (or 1/2 to 1 tsp) minced garlic
1/4 - 1/2 cup honey (to taste)
chili powder to taste
optional: 1 tsp ground ginger
lemon or lime juice to taste

Directions

Combine all ingredients in a saucepan and stir for 5-10 minutes. Adjust honey and pepper to get the taste you want.

The sauce will be thick. Thin with lemon or lime juice as desired.

This makes about 10-12 oz. (depending how much you thin it) and will keep in the fridge several weeks.

Number of Servings: 16

Comments on review: Lea and Perrins Worcestershire Sauce made in the U.S. is gluten-free, as listed on their website and verified by Heinz Consumer Affairs. According to Heinz, all varieties of Lea and Perrins made in the U.S. are gluten-free. If you reside outside the U.S. and use Lea and Perrins Worcestershire sauce, do what this reviewer did, always read labels. If you see malt vinegar with barley on the label, it contains gluten. I thank this reviewer for making her comments. It's a good illustration of why reading labels is so important. I live in the U.s. and do not have access to label information about all products sold in all countries.

This is making me soooo hungry :drool

It's hard to find BBQ recipes that don't include ketchup. I see you have some here! Yay!

I'm off to cut 'n paste. Thanks.
