I bought sweet potatoes for this one: http://ceramiccanvas.com/2009/08/ginger-5-spice-ketchup-double-fried-sweet-potato-french-fries/

I need to get some five spice powder for the ketchup, though. I hope to make it tomorrow. I will substitute lard or tallow for the veg oil, of course! Probably tallow, I just found a bunch while cleaning out the second freezer.

I feel like I'm putting on a couple of pounds and need to get tough with myself again. So it was garden veggie chowder for supper tonight, tomorrow will be fried sweet taters with the rest of the veggies and maybe some collard greens and some chicken, and Monday will be a nice, fatty pork shoulder. No more pudding, no more soda (from juice, but still) until I get this layer off again. Sheesh. Its a tough job, but somebody has to heat up the fryer. :p

Oh my! I could hardly get past the gorgeous photos to get to the recipe. I think I'll have to see what else they've got around there...

I want you to know that it was quite difficult to find instructions on making crispy sweet potato fries. I got a million recipes for baked fries....been there, done that, will do it again, but.... I am missing crispy FRENCH FRIES and really, really want some crrrrrrispy fries! Don't they look crunchy in the photo?

They do look crunchy! Although every photo looks so beautiful, it's hard to believe it's real. I hope for your sake they are that crispy! It would be a lot of effort to photoshop a bunch of sweet potato fries.
