Tapioca flour substitute

I really want to bake something today, as it is pouring rain, and seems like a nice way to spend the day. This will be my first foray into baking since I ditched gluten. My local Kroger had xanthan gum, which I saw was in a lot of GF baked goods recipes, but no tapioca flour. Is there something I can sub for it? I have oat & brown rice flours, cornstarch, and corn meal. Will an of those work?

I haven't tried it but cornstarch has about the same consistency/density as tapioca flour so if you were going to try one of the things you have on hand, that's the one I would choose. I don't think any of the others are comparable.

My 5 yo daughter went dairy, soy and gluten free just over a year ago and so I feel your pain. Baking gluten free is an adventure at best but it can be done. If you haven't done so already I would strongly suggest that you invest in Bette Hagman's cookbooks. They have been such a huge help to me in trying to find things to make for my daughter. The books don't go into dairy and soy free but those things are easier to replace than gluten products.

Your thread was the very first that caught my eye when I registered, so I suppose now I should go over and introduce myself :D
