What do you do with this stuff?

I have an abundance of cabbage leaves and broccoli leaves. Does anyone freeze these and how do you use them?

I use those sorts of things as duck food. I'm sure you could also make veggie broth with them plus other extra veggie parts (like ends of onions, etc.) Sauerkraut with the cabbage leaves?

The Wife makes stuffed cabbage with the nicer leaves. She just made some for the freezer after we made kraut.

The outer courser leaves are duck and quail food here.

I have no critters to feed them too. I just think that there has to be more human uses for them.. seems like such a waste.

Even if you don't make veggie broth or sauerkraut, compost is never a waste, in my book. I don't ever feel guilty recycling food that way. JMO.

Members of the cabbage family usually are not added to veggie broths because of their strong taste. I might add a bit, depending on what the broth will eventually be used for, but not much. The chickens get the leaves from my kitchen now, but I agree with Drakemaiden, it isn't wasted if it is composted.
