Can anyone here help me reconstruct this little bit of information I have drifting homelessly around the back of my head? I seem to recall reading somewhere, adn I do not recall on what degree/type of EVIDENCE the statement was based, that some types of peanuts were better for you than others, depending on how they were prepared. I am totally unable to remember anything more than that :p

Anyone know what I'm talking about, and able to fill in the gaps?

Given those choices, I would get the dry roasted over the oil roasted. The less veg oils in your diet, the better.

The best version would be to start with raw and prepare them as "crispy nuts" as detailed in Nourishing Traditions. My guess is that whey-fermented raw in-shell peanuts, boiled, would be a good choice, too. I hope so, anyways, as that is how I eat them! Both methods will neutralize phytic acid in the peanut.

I have some raw peanuts with skins and I was wondering what to do with them. DUH, I didn't think about soaking them for crispy nuts :p I think my brain is broken sometimes.
So, do you just leave the skins on?

Soak nuts overnight in water with whey and sea salt added.

Cook on low heat in the oven the next day after draining.

I don't see a listing for my choice of the best way to eat peanuts: In the middle of a Reese's cup.

KIDDING! Well, almost. It's my favorite, but I don't do it.

Frequently.
