What to do with all that bologna???

First of all - let me say that I haven't eaten bologna since I was a kid and I don't even remember if I LIKE bologna. So, other than a sammich, I have no clue what to do with it. But..... when my son-in-law was staying with us he told me that he looooved bologna. Being the frugal person that I am - when the local grocery put it on sale, I bought it - LOTS of it. It's now taking up valuable freezer space. I know the logical thing would have been to give it to the s-i-l, but he busted outta here pretty quickly when my daughter gave him the heave-ho! Simple answer, I guess, would be feed it to the pigs or the dogs or the chickens - and I might end up doing just that. But, I know there's bound to be a use/recipe for it that I have never thought of so I thought I'd run it by you folks. p.s. It's Turkey Bologna Ideas?

Perhaps not an answer for "a lot of it" but it is pretty good fried crispy and used in place of bacon in a BLT sandwich. It can also be diced, fried, and put on baked potatoes.

I'd be inclined to treat it like any other sausage:

-fry it up with some potatoes and eat it with some kraut
-layer it with potatoes and onions as mock ham in scalloped potatoes
-dice it and use it in lasagne or other pasta dishes
-chunks baked in bbq or teriyaki sauce might be nice over rice
-maybe even slice it and roll it up to eat as hot dogs in hot dog buns if you like hot dogs?
-try making wraps with tortillas, cream cheese, some veggies like bell pepper, grated carrot, tomato slices etc.

Or grind chunks of it to use like bulk sausage meat and mix in your fave sausage spices, then do something like:

Autumn Sausage & Apple Casserole

1 pound bulk pork sausage
1 medium apple, peeled and chopped
1 medium onion, chopped
2 ribs celery, chopped
3 cups cooked long grain rice
1/2 cup raisins
1 tablespoon brown sugar
1/2 teaspoon salt
1/4 teaspoon ground allspice
1/4 teaspoon ground cinnamon
1/8 teaspoon pepper

In a large skillet, cook the sausage, apple, onion and celery over medium heat until meat is no longer pink; drain. Stir in the remaining ingredients. Transfer to a greased 2-qt. baking dish. Cover and bake at 350 for 25-30 minutes or until heated through. 4-6 servings.

I'd grind it and add sweet pickle relish and mayo and a bit of horse radish grated up and make sandwich spread. Bologna salad! :D

OH and maybe pickle it to eat with cheese and crackers.

I am truly amazed at all the recipes and ideas for bologna! I'm definitely going to be trying some...no use trashing the stuff until I see if we might even like it! It might come in especially handy when we do our 'eat what we have" month starting in October. I'm excited to try that and see how it goes.
