So you took my advice and raided every store in a 50 mile radius that had a turkey sale. Now what?

Once you are sick of roasted turkey, it's time to branch out in to more adventurous territory.

Use this thread to post your favorite non-traditional turkey recipe so no one regrets stuffing their freezer with birds over the last month :D

Buffalo Turkey Dip
2 (8 ounce) packages cream cheese, softened
1 (10 ounce) can chicken, drained (or equivalent rotisserie or freshly-cooked, chopped chicken)
1 cup ranch dressing
3/4 cup red hot sauce
1/2 cup shredded cheddar cheese

# 1 Beat cream cheese, ranch dressing, and red hot sauce.
# 2 Fold in shredded turkey.
# 3 Spread mixture into pie plate sprayed with Pam.
# 4 Bake at 350 degrees for 15 minutes.
# 5 Add cheddar to top and bake an additional 10-15 minutes.

Use either fritos or jicama slices (good for low carbers) for dipping.

We like to filet the breast, roll in flour/corn meal and fry it like you would deer tenderloin.

I never had too much left over turkey enough to actually use it in a recipe....just soup, turkey salad or sandwiches.

Turkey quesadillas! Turkey and onions, sauted a bit with some mexi seasonings (cumin, chili powder, garlic) and cheese. Folded into a corn or flour tortilla & grilled in a lightly oiled skillet.

Found this one on Edible Aria Guava & Chipotle Roast Turkey with Tomatillo Salsa :drool
Sear turkey breast or turkey breast tenderloins over medium-high heat just enough to get those nice grill marks (you can do this indoors or out). Set aside.

Make glaze by very slowly melting guava paste in stock over low heat so that it doesnt burn. It should be about the thickness of honey when done. You can add 1/2 teaspoon vinegar if it is too sweet for you.

Meanwhile, steep chipotle peppers in almost boiling water until soft and pliable, about 10-15 minutes. Discard water, stem, split and seed. Pure briefly with a little stock to form a paste about the consistency of ketchup. Add a little bit at a time to the guava, tasting it for heat as you go.

Prepare Mexican rice, roast corn & black beans and tomatillo salsa (fresh tomatillos, onions, jalapeno, salt, lime juice, olive oil and cilantro).

Liberally baste the turkey with the glaze then roast in a preheated oven at 375 degrees until it reaches an internal temperature of 155 degrees, about 20-30 minutes depending on the thickness of the meat. Reserve a little of the glaze. Transfer to a cutting board to rest, where it will continue to cook for a few minutes. NOM!

Darwin Davis TURKEY RECIPE

I thought this sounded good! Here is a turkey recipe that also includes the use of popcorn as a stuffing ingredient -- imagine that. When I found this recipe, I thought it was perfect for people like me, who just are not sure ...how to tell when turkey is thoroughly cooked, but not dried out.
Give this a try.

1 - 15 lb. turkey
1 cup melted butter
1 cup stuffing (Pepperidge Farm is Good)
1 cup un-popped popcorn (ORVILLE REDENBACHER'S LOW FAT IS BEST)
Salt/pepper to taste

Preheat oven to 350 degrees. Brush turkey well with melted butter, salt,and pepper.
Fill cavity with stuffing and the un-popped popcorn. Place turkey in baking pan making sure the neck end is toward the front of the oven, not the back.
After about 4 hours listen for the popping sounds.

When the turkey's butt blows the oven door open and the bird flies across the room,.... it's done.

And, you thought I didn't know how to cook...

Turkey Alfredo
2 tsp butter
1/2 c minced onions
4 garlic cloves, minced
2 cups leftover turkey, chopped or shredded
2 c Half-n-Half (I used whole cream)
1-2 tsp flour ( ised cornstarch, due to gluten content)
1/2 tsp salt
pinch black pepper
1/2 c grated Parmesan cheese
8 c hot Cooked fettuccine (about 1# uncooked) (I used brown rice fettucini)
1 pkg frozen chopped spinach (optional), cooked & drained well

Melt butter in a non-stick skillet over medium-high heat. Add onions & garlic, sautee 1 minute or until tender. Add turkey, sautee 3 minutes or until heated through. Remove to a plate & set aside. Reduce heat to medium-low.
Add cream and gently heat for about 1 minute, then add flour slowly & mix until smooth. Return turkey to cream & add salt, pepper and cook 1 minute or until thoroughly heated, stirring constantly (do not boil!). Gradually sprinkle 1/3 c cheese over turkey mixture (also spinach if youd like), stirring constantly for 1 -2 minutes . Remove from heat. Combine pasta and turkey mixture in a large bowl. Top each serving with 1-2 tsp cheese . Serves 4 easily.

Can't your really just substitute turkey into any of your favorite recipes?? Especially for chicken. I think if turkey is so neutral in flavor is just goes with the flow. :idunno

I look forward to some new recipes.

Don't forget to make bone broth out of the carcass!

Add a little raw apple cider vinegar to the water to make the broth mineral rich (it helps leach them out of the bones)
