what to do with surplus potatoes

Ok so I am trying to plan ahead this year. There is a farmer near me that grows a lot of potatoes and after he harvests them the fields are open for gleaning. Last year I gathered two large totes full of spuds but before we could use them up they froze and went bad. My problem is I do not have a suitable place to store them fresh so they need to be put up somehow. I am open to any ideas what to do with them. Thanks

I've had good luck dehydrating potatoes in past years. This year, if my crop hasn't rotted in the ground with all the rain, I'm thinking about canning some.

I think the only thing you can't do with a potato is freeze them raw.

They can be dehydrated or cooked before freezing, or canned. I haven't learned how to can yet, so I would chop them rather small, boil them and freeze them.

You can use them plain, make soup, or add cream,butter,salt and mash them right in the bag! (Fun for the kiddos!).

I slice mine, some dice them, and can them. However you cut them up, they are great for frying, dumping into a stew, eggs, or just baking with some seasoning. Mine manage to stay fairly firm even after canning....mmmmmm

I definately say to can them. I always buy canned potatoes. They're so much easier than dicing your own, lol. I can't tell a difference between canned and fresh anyways. Sure beats rotten potatoes too.

Can them!! Canned potatoes whip the stored frsh ones!! They have a better flavor I think. They are also wonderful fried, smashed, or however.
