Okay, this can go two ways.
I can tell you about my candy bar salad.
Or I can tell you about my spinach salad with white chocolate vinaigrette.
Both, you say? Glutton for punhisment, I retort.
On her sixth birthday, my niece wanted a salad bar party. Her mom had been trying to get her four kids to eat more healthy foods, and the sweet thing thought she ought to make her mom happy, so even though she didn't really want to, she asked for a salad party.
So...did I make a Spinach salad with white chocolate dressing?
Nope, I made a candy bar salad. I went to the dollar store with a twenty and got one of everything. Cut them into standardized sizes, and dressed it all with chocolate cool whip, chopped nuts and pastel marshmallows. Others brought "normal" salads. And took them home, untouched. Hmm. Wonder why?
But the really good news is that I am not kidding about the white chocolate salad. It actually saved the day once when some friend stopped by unexpectedly.
The salad is made with baby spinach, nutmeats of choice, supremes of fresh orange (you cut the segments out of the membranes), fresh strawberries and fresh blueberries. A small amount of minced red onion is a good contrast.
The dressing is made with room temperature champagne vinegar (or any mild vinegar), fresh squeezed orange juice, melted white chocolate and a pinch of salt. Shake it with olive oil and don't refrigerate it !
It's a really good salad !
And I am hungry !
Edited to make it appear less like I am a drunk and can't spell.
