I have some and need some recipes for it.....anybody got any good ones? I haven't worked with it much so I don't really know much about it....it was a gift.
All I've ever done is substitute it for up to 50% of wheat flour in pancake recipes (note that this is more than usually recommended, and you might oughta try it with a smaller % first to see how it suits your tastes) or substitute for up to 25% of wheat flour in pumpkin or banana bread.
I'll be following this thread tho to see what others suggest!
Ployes!!!! I love ployes!!! Just like Memere made by the zillion with every meal. They look like a round yellow sponge and all those bubbles can hold a LOT of butter! Then roll them up and eat them with soup or stew, my favorite.
Ingredients

1 cup white buckwheat flour
1 cup white flour
4 teaspoons baking powder
1 teaspoon salt
1-1/2 cups cold water
1/2 cup boiling water
--------------------------------------------------------------------------------
Mix dry ingredients.
Add cold water and let stand for 10 minutes.
Add boiling water and drop to make thin 6 inch pancakes on hot griddle.
Bake on one side only until bubbled and firm.
Serve on warm platter.
I am looking for buckwheat to grind for this purpose. I have a big bag of the mix from Bouchard Farms in Frenchville, ME, the only place to buy it, IMO!
We use buckwheat flour all the time. I love it in my 10 grain bread recipe. (We even grew buckwheat this year and have started some harvesting. )
I agree, start adding a bit to your bread recipes and the like. I have found that some people do not like buckwheat as well as we do, so I have heard some complaints from people who have eaten some of my bread.
If there is a high amount of buckwheat flour in the mix, it will make your items have more of a greyish appearance.... like buckwheat pancakes.
The buckwheat pancake mix I make is a yeast recipe that sits overnight and the batter is ready for pancake or waffle making in the morning. (Or you can make it first thing in the morning and have them for dinner that night.)

1 tsp baking soda
2 cups buttermilk
1 Tb molasses or honey
1 tsp salt
2 cups buckwheat flour
1 egg, well-beaten
Mix the soda with the buttermilk in a large bowl. Add the molasses. Sift in the salt and flour, add the egg. Set aside for a few minutes (up to 5 mins), then stir well, adding more flour if needed. The batter should be thin enough to pour from a pitcher. Bake on a hot greased or non-stick griddle, turning once after first side is an even brown.
Buckwheat Yeast Pancakes
1 cake yeast (2 tsp instant yeast)
1/4 cup warm water
3 cups buckwheat flour
1 cup milk or water
1 scant tsp salt
2 Tb molasses or honey
1 cup water
1 cup milk
Dissolve yeast in warm water. Mix the yeast, flour and milk in a large bowl, to make a stiff batter. Let stand, covered in a warm place overnight. In the morning add the salt, molasses and water. Thin the batter with milk, using as much as needed to make the batter thin enough to pour from a pitcher. Bake on a hot greased or non-stick griddle, turning once after first side is an even brown.
