Windfall Apples?

I get windall apples for my rabbits. I've noticed A LOT of them are perfectly good enough for cooking with.

Any NON-DESSERT apples recipes?

Is there such thing? :p Are you looking to reduce sugar intake? If so, I can help. Otherwise, sorry. Oh, wait, wait!!!! Dice 'em up, simmer gently with a little sweetener, cinnamon, and butter if you'd like (I use stevia) and use this sauce to top French toast. Yum.

Abi makes a delicious salad with roasted chicken, bacon and apple pieces. OOoohhhhh AAABBBBBIIIII!!!!

Well, you could thinly slice and dehydrate them for healthy snacks or roast them with a pork roast. Unsweetened applesauce comes to mind, but still that's probably considered a dessert. There are not a lot of uses for some fruit outside desserts, and for many they are a dessert simply because they exist! Hopefully someone a lot more experienced than I am will be able to help you.

Chicken and Apples in Honey Mustard Sauce
Preparation time: 30 minutes.
1/2 cup apple cider
1 1/2 teaspoons cornstarch
Salt
Freshly ground black pepper
1 Tbsp honey
1 Tbsp mustard
2 Tbsp seasoned dry breadcrumbs
4 4oz chicken breasts
1 Tbsp olive oil
2 small unpeeled apples, cored and cut into eighths (use Golden delicious, Granny Smith, Jonathan, Pippin, or McIntosh apples, see cooking apples chart)
1/2 cup chicken broth
Fresh parsley
Whisk cider, cornstarch, mustard, honey, salt and pepper (to taste) in a bowl. Set aside.
Spread bread crumbs on a piece of wax paper, lightly coat chicken with crumbs.
In a large non-stick skillet, heat the oil and add the chicken breasts. Cook over medium heat until golden brown on one side, about 3 minutes. Turn chicken, add apples, and cook until browned on the other side.
Add chicken broth, cover and simmer until chicken is tender, about 15 minutes.
With slotted spoon, remove chicken and apples to serving plates. Whisk cider mixture again and add to skillet. Cook and stir over high heat until lightly thickened and bubbly, 1 to 2 minutes. Spoon over chicken and apples, sprinkle with parsley.
I like to serve this over rice. Serves 4.

We use apples when we make liver.
Just peel and thinly slice quartered apples and add them along with some sliced onion to partially cooked livers in the pan. the apples cook for the same amount as the onion. You want the onion to be translucent, they can start to brown. the apples should be soft but not mushy. Since liver has a tendency to be dry, the addition of the apples and onions not only enhances the taste, but also adds a nice bit of moisture to the meal.

We also add apples to red cabbage and to potato salad. For potato salad we cut the apple very fine, almost like relish, you don't want anyone to notice that it is in there. It adds a nice sweet and sourness to the potato salad.

When I make turkey I do not stuff it, but I will often put an apple along with celery and herbs inside it to add flavors and keep it moist. This is especially good when making wild turkey.

Well, applesauce of course (I suppose some people consider that a dessert but to me it is an anytime FOOD, incl. sometimes a dinner vegetable) and juice! :)

Also applebutter or apple leather.

Ditto! In fact, I have a small bowl of it here at my computer, sprinkled with a layer of frozen blackberries and drizzled with raw honey.
