I "gleaned" a whole bunch of huge almost sprouting golden beets from the Food Bank food waste bin outside. (remember I work there 2x a week). They threw them all out cus "they are no good".

Well, I said they are good. I grabbed as many as I could reach down in the recycle bin and brought them home to can. I got 12 quarts of the most beautiful beets ever.

PEOPLE !! WASTE!!

Good for you I try to catch things at the stores I work...some have produce, all have "date of" requirements. So many bring homes if I can catch them. I know that can of coffee that says Feb 2025 is still good!

Only ever had 1 jar go bad after canning on it. That's a better record than I've had with commercial canned goods.

I look, listen, and smell all canned items like I was taught as a kid.

Used the ball canning recipe. The house smelled great. The wife wants me to can some now. What I made today, we're going to add some ground beef and throw in the crock pot tomorrow to cook it down. It's supposed to be soupy prior to canning.
