I "gleaned" a whole bunch of huge almost sprouting golden beets from the Food Bank food waste bin outside. (remember I work there 2x a week). They threw them all out cus "they are no good".
Well, I said they are good. I grabbed as many as I could reach down in the recycle bin and brought them home to can. I got 12 quarts of the most beautiful beets ever.

I try to catch things at the stores I work...some have produce, all have "date of" requirements. So many bring homes if I can catch them. 
I know that can of coffee that says Feb 2025 is still good!

Heck - I'm just finishing up my 2023 coffee. Next will be 2024!!!
