We just bought another freezer about 3 weeks ago, I ran out of room in my big upright so we bought a smaller upright to keep meat in. I think it was a wise investment for us.
We are campers to. I also use ziplock baggies for pancake mixes, add water and mush. I have all of my spices in the little baggies labled and stored in a bowl. I measure enough coffee for 1 pot and put it in a ziplock bag, 3 days of camping = 3 bags. it takes up a lot less space.

And as for the canning, you can reuse the jars, just buying lids. You can find a pressure cooker on ebay
I got my 16 quart Presto Pressure Caner at WalMart for 60.00 and I absolutely Love it. It will hold 10 quarts or 16 pints at one time.

Thanks Artichicken :hugs My Little Ones are 31 and almost 34. I do have 3 grands that I love more than life itself and would do anything for. I believe that when I get to heaven my babies will come running to greet me so although its bad to lose a child I can take comfort in that.
