Bee, would you mind describing your process for canning meat?
I mean, do you just pour water over the raw meat?
Do you heat it at all before packing?
I'm planning to can a chicken for my first practice, but i would like to do it as well as possible.

Especially since (after i spent $200 on a pressure canner), my aunt tells me that when she raised rabbits and canned them, she never used a pressure canner because she was scared of them.
She water bathed.
And i think she did it raw.

I posted the same question on another board, and i heard from 2 different people who store unwashed peas in ziploc bags and have eaten from that for more than a year with good results.
So, until i get some cheap pillow cases, i think i will be...
We got to pick some purple hull peas from a friend's garden and starting shucking them tonight.
The friends said that they store them unwashed in a pillow case in the freezer for about 6 months.
I'm fresh out of pillow cases.
Supposedly if you store them without washing them, there's no water...
I agree with dragonlaurel. My husband and i have gone through times like this. Often he just doesn't feel sexy, or he's thinking about stress at work or whatever. And if i communicate sexual frustration in response, it gets worse because then he feels inadequate as a husband.

i think we were typing at the same time.
It was about a cup and a third of sugar in the whole thing, plus some spices. Does that make a difference?
I really wish i understood the science of canning a little better.
I haven't canned anything in so long.....and even then it was just one batch of marmalade.
Tonight, i canned exactly two pints of some really delicious pear butter that i'm really proud of.

The directions said to get the air bubbles out, and i tried, but now that i'm done, i see...

I let my pears ripen as long as i dared (some were shriveling) and then i followed a tip i got from someone local.
I boiled them whole for about an hour before peeling, etc.
It has worked marvelously.
I am working on a small batch of pear butter right now...
The other thing about them foraging all the time is that they won't let you take two steps in the yard without begging for food. At least that's what mine did. They always thought i should be bringing them something, and they would trip me to beat it out of me.
Maybe it would be different if...
