Sunday was beef stroganoff with noodles and an awesome zucchini dish. DH found two surprise zucchinis on the bushes we thought were done for. I sauteed the zuccs with chopped onion in a little butter and added chopped tomatoes. When zucchini was tender, I added salt, pepper, dill and grated some pepperjack cheese over the top. Yum!

Monday - tacos (leftover meat will reappear as enchilada casserole)

Tuesday - Reisfleich. We do it in the pressure cooker, but can easily be made on stovetop or as an oven casserole.

Reisfleisch
Makes 6 servings

1 tablespoon extra-virgin olive oil
1 medium onion, diced
1 red bell pepper, diced
3 garlic cloves, minced
2 tablespoons tomato paste
1 teaspoon salt
teaspoon cayenne pepper
1 teaspoon cumin
1 tablespoon Hungarian paprika
teaspoon black pepper
1 pound smoked sausage, thinly sliced
teaspoon marjoram
2 cups long-grain rice, rinsed
2 1/2 cups beef stock

Directions
1. Set the pressure cooker to RICE and timer to 8 minutes.
2. Pour the oil into the pressure cooker and let preheat with the lid off.
3. Add the onions to the pressure cooker and cook for 2 minutes, stirring occasionally.
4. Add the red pepper and garlic to the pressure cooker; stir.
5. Add the tomato paste to the pressure cooker and cook for an additional 2 minutes.
6. Add remaining ingredients to the pressure cooker; secure lid.
7. When cooking is complete, stir and serve immediately.


Tonight is Sweet and Sour Chicken.

We had stroganoff last night , except is was venison stroganoff.

Today I got the crock pot out again and made Tortilla Stacker. You need:

Sprouted Corn Tortillas
Cheese
Taco Seasoning (I make my own with cumin, chili powder, onion powder, garlic powder)
Ground meat
Salsa

You just make layers with each ingredient, starting with the tortillas, then put the other ingredients on top, and keep repeating. I made 4 layers I believe.

I think I am doing a Chicken Tetrazzini tonight. Its nice because the recipe is enough for two dinners. I will need to sub GF noodles. But mushrooms were on sale this week so the timing is perfect.

I put chicken and stock in the crock pot, thought I would just make chicken. Ended up with mushrooms, onions, turnips,and quinoa to soak up some of the stock. looks gross but its tasting pretty good!

tonight is easy...soup and grilled cheese.

Nicole has sniffles and not feeling great, I don't care what I eat and Tony is feeling kinda icky today also....ugh, hope we all don't go down with the crud or something.

Leftover Black Beans and rice with cornbread made in my "new" yard sale find $3 cast iron skillet! I haven't had any cast iron since we left FL due to the weight in the RV. Now that we are stopping I can have some again.
