eta: 48 hours and they're still green!!! so far so good i mean, other than the bits that are just dirt cuz nothing has sprouted yet. but the green ones are still green. and the dirt is still dirt. so i'm doing awesome. right?

I go by feel on watering. Stick your finger in the soil. If it feels moist you can wait a bit.
