@baymule look for the expandable bags! They're folded at sides, so become larger. Bought some when I butchered hogs, for the hams/shoulders. Would work great on large birds.

My old food saver, that I bought used off of eBay, has a long narrow tray that I have to put the open end of the bag, down in. PITA, but the machine works fine.
