I just baked and froze 8 loaves tonight and plan on another 8 tomorrow to get the good out of several starter bags I had.

My husband and I made several of the variations to keep it exciting. :lol:

Guess I will have to get some starter...started! :/ The biscuits sound wonderfull. Has anyone tried them yet!?

We had the pancakes on Sunday; light and fluffy, with real maple syrup.

Yes, in the 1980's I made them. I must have thought they were good, or I wouldn't have saved the recipe. I am going to make some this week but I am also going to see how they work for frozen ready-to-bake biscuits.

You can freeze homemade biscuits baked or unbaked, but I am doing unbaked.

Freeze baked biscuits: Let cool, put into plastic bag, with waxed paper between layers. Remove all air and seal. Will keep for up to 3 months in freezer. Reheat by heating in 300 oven for about 10 minutes.

Freeze unbaked biscuits: Roll and cut out biscuits. Sprinkle flour on tops of biscuits. Layer into plastic bag, with waxed paper between layers. Remove all air and seal. Bake, without thawing, at 400 oven for about 20 to 25 minutes or until golden brown. They are better if used within 1 month of making.

Quick Cinnamon Streusel Cake

For this recipe, you use 3 - 4 cups AFB batter, depending on size of the pan you are using. Do not add anything to the batter before making this recipe.

Make the streusel - Combine until crumbly and set aside.

1 stick unsalted butter
2/3 cup brown sugar
2/3 cup flour
1 T cinnamon

Grease a baking dish. Put 1.5 to 2 cups AFB batter in and spread batter to corners. Sprinkle half the streusel mix over the batter. Put rest of batter on top of the streusel mix. Top with the remaining streusel. Bake at 325 for about 1 hour; do not overbake, as it will dry out.

Amish friendship bread was the bane of my existance for a while. Let's put it this way, I ended up baking and freezing around 24 LOAVES just to be free of it without wasting it. ARGH!!! :he I foolishly let it multiply a few too many times and it quickly went overboard. Maybe, I should give it one more chance but use it to make the sourdough bread for lunches.

Aidenbaby, this whole thread started in my journal... My dear husband had started a new job. One of the folks there asked if he would like some AFB starter. Well, dh remembered how much he liked AFB in the 80's, so he said yes. He brought home 3 bags of starter!

Since everyone in our area is swamped with AFB, we kept the 3 bags. On day 10 of the first week those 3 bags became 12 bags of starter plus a bunch of baked bread. I was on week 3 when Quail_Antwerp came for a visit and took 2 bags away.

Afterwards, I decided to take 1 cup of starter from each bag mid-cycle and bake. It became more manageable. Then I read the starter could be frozen for up to 2 months.

I am going to make some chocolate cake today with some thawed AFB batter. I will post if freezing works out.....

I didn't know you could take any out mid cycle! How come no one told me this until just now?

And for you, I'd probably end up killing my DH for having done that to me.

No one told me either - I just "wing it" a lot! I tried it and it worked.

When I make something, dh asks - is this a recipe or just something you made up? :p

Decided to make the Quick Cinnamon Streusel Cake instead of the chocolate cake with the frozen AFB batter I thawed. It is just out of the oven and looks and smells good.

My notes:

The AFB batter was in the freezer for about 1.5 to 2 months. I removed the batter Wednesday night, as I was going to bake on Thursday. I left the batter in the ziploc bag in a large bowl on the counter.

When I opened the bag this morning, the batter smelled normal and was completely alive with air bubbles.

Freezing AFB batter works! :clap
