once it is vinegar it is always vinegar, right?
meaning it doesn't change to something else

wondering because I have vinegar that I made, took out the mother to store but haven't used this vinegar in a while,

what's the shelf life of this, can I still consume it?
and clean with it
etc?

or is there something I need to know about?

sorry if this is a dumb question

thanks for your help

Well if vinegar is the end-of-the-road and will never turn into anything else - is there a shelf life? Is anyone out there using 100 yr. old vinegar?

very old (I believe 100 yr old is within the range) balsamic vinegar -- the REAL stuff -- from Italy is about as expensive as the finest wines. And presumably drinkable.

Regular ol' vinegar may well suffer deterioration of taste after long spans of time. I've used some apple cider vinegar (in salad dressings) that was probably at least 5-7 yrs old and did not taste particularly unusual... this was the cheap pasteurized Heinz stuff, mind you, not homemade or raw.

In general though AFAIK as long as you don't mind the taste and it was stored in a safe container you should be able to use it.
